Ingredients
5 items · serves 6- 200 g dark cooking chocolate (chocolat pâtissier)
- 6 very fresh eggs
- 30 g butter
- 1 tbsp caster sugar
- Pinch of salt
Contains: egg, milk. Check product labels: brands differ.
Steps
5 steps- 1Break the chocolate into a bowl with the butter and melt it over a pan of barely simmering water (or in short bursts in the microwave). Let it cool until just warm.
- 2Separate the eggs. Stir the yolks into the chocolate one at a time.
- 3Whisk the whites with the salt to soft peaks, add the sugar and whisk to firm, glossy peaks.
- 4Stir a large spoonful of the whites into the chocolate to loosen it, then gently fold in the rest with a spatula until no white streaks remain.
- 5Spoon into a dish or 6 small pots and chill for at least 4 hours. Not suitable for pregnant women, babies or anyone advised to avoid raw egg.
